10 Minute Spaghetti Fra Diavolo

I created this recipe the other night around 10:00 p.m. when I was STARVING!! I was actually working on another post and realized that I hadn’t eaten dinner! For those of you who know me, you know I have to eat regularly.  Otherwise, I am very cranky! BUT, three kids under three can prevent you from actually eating at the dinner table.  I try to grab a bite here and there between my son’s “mommy, may I haves” and my daughters trying to climb out of their highchairs, but most nights I am hungry later in the evening.  The night I created this amazingly simple, spicy dish I was craving pasta.  I simply boiled the spaghetti in chicken stock, allowing most of the liquid to absorb into the pasta.  Stirring the whole time, I added 1 whole tablespoon of cracked red pepper to the pan with a pinch of freshly ground black pepper.  Once the liquid was almost completely absorbed, I turned off the heat, added Parmesan cheese and fresh parsley – that’s it!!  It is delicious and PERFECT when you’re in a pinch for time.  Obviously, this one is not for the kiddos :)

10 Minute Spaghetti Fra Diavolo

Ingredients

  • 1 lb. spaghetti
  • 32 oz. chicken stock
  • 1 tbsp. cracked red pepper
  • 1/2 tsp. freshly ground black pepper
  • Parmesan cheese for grating
  • bunch of parsley, torn
  • olive oil for drizzling

Instructions

In a large pan or pot, break uncooked spaghetti in half and add to pot.

Pour all chicken stock over pasta. Drizzle with olive oil.

Over medium heat, bring stock to a boil, continuously stirring pasta.

When half of the liquid is absorbed, add cracked red pepper and pepper and continue to stir until almost all of the liquid is absorbed.

Turn off heat, add Parmesan cheese and parsley. Drizzle with olive oil.

Serve immediately.
