Avocado, Banana Pepper & Tomato Salad

This salad has all of my favorites combined into one spicy salad.  From avocados and red onion to fresh summer tomatoes  and sauteed banana peppers, this salad packs a healthy and spicy punch.  I also added feta cheese to add some saltiness to the spice as well as tons of fresh basil.  I finished it off with simple splashes of balsamic and apple cider vinegar and a drizzle of olive oil.  It is divine!  I can’t wait for you to serve this surprisingly different salad to your summer cookout guests.



Avocado, Banana Pepper & Tomato Salad


  • 1 ripe avocado, pitted and sliced
  • 2 large ripe tomatoes, sliced into wedges
  • 3 large banana peppers, sliced
  • large bunch fresh basil
  • 1/4 cup crumbled feta cheese
  • 1 red onion, sliced
  • salt and pepper
  • 1/2 tbsp. apple cider vinegar
  • 1/2 tbsp. balsamic vinegar
  • 2 tbsp. olive oil


In a small saute pan, drizzle 1 tbsp. olive oil, and bring to medium-low heat.

Add banana peppers to the pan and saute until slightly softened, yet still bitey, roughly 5-7 minutes. Remove from heat.

In a medium bowl, toss the remaining ingredients and add peppers.

Season with a pinch of salt and pepper to taste.

Serve with crusty bread and extra olive oil.
