Bacon, Avocado, and Egg White Melt

Parents…we need an adult answer to the grilled cheese sandwich and this Bacon, Avocado, and Egg Melt fits the bill!

On those days that I’m home for lunch with the kids and they request a grilled cheese sandwich, I prepare this sandwich for myself.  It’s delicious and full of good protien and good fat.  I just whip up the classic grilled cheese for the little ones and hard boil two eggs at the same time.  That way, once the kids are served, I just have to assemble and grill my simple sandwich.  It is so satisfying and a great way to combine healthy fat and protein with a little naughty melted cheese.  (Naughty is clearly back in my vocabulary again after re-reading the 50 Shades Trilogy – all in preparation for the movie release :)

Bacon, Avocado, and Egg White Melt


  • 1 avocado, sliced
  • 2 eggs, hard boiled and sliced (I remove my yolks)
  • 4 slices of munster cheese (or any cheese you're craving)
  • 3-4 slices of bacon, cooked and crispy
  • 2 slices Italian bread
  • 1 tbsp. butter


Place 2 slices of cheese on each slice of bread. top once side with bacon, then egg whites, then avocado and press together.

Over medium-low heat, melt 1/2 tbsp. butter in your skillet. Place the sandwich down and cover with a lid. Turn over, carefully, and repeat with remaining butter.

Push down on the already toasted side of the sandwich to thoroughly melt together.

Remove from skillet, slice in half and enjoy!
