Chicken Lettuce Wraps are the PERFECT appetizer for your summer cookouts. The chicken filling can be made in advance in one skillet, chilled, and quickly reheated before serving. The key to the dish is fresh, crispy butter lettuce. I like to buy two bunches of butter lettuce, still attached to the roots. Then, you can choose the perfect lettuce wrap leaves and use the rest for a salad. From fresh summer lettuce to cilantro and lemon juice, these wraps are light, bright, and summery. Best of all, all three of my kids loved these wraps. They held them like tacos and managed to eat more from the serving dish than the adults!
Ingredients
- 2 chicken breasts, uncooked, small dice
- 1 lemon
- 1 yellow bell pepper, small dice
- 1 small vidalia onion, small dice
- 1 tsp. paprika
- 1 tsp. garlic powder
- 2 tbsp. olive oil
- salt and pepper
- small bunch cilantro, torn
- 1 bunch butter lettuce, washed, drained, and separated into cups
Instructions
In a medium bowl, combine diced chicken, paprika, garlic powder, juice of 1/2 lemon, 1 tbsp. olive oil, and a season with salt and pepper. Using a spoon, thoroughly mix the ingredients together so the spices adhere to the chicken. Set aside.
In a medium saucepan, add remaining olive oil, bell pepper, and onion. Saute over medium-low heat until the ingredients are sizzling in the pan.
Add seasoned chicken to the pan, and combine the ingredients with a wooden spoon.
Continue to cook until chicken in fully cooked.
Add cilantro and combine with wooden spoon.
Spoon into lettuce cups, plate on a serving platter, and garnish with remaining 1/2 lemon slices.
