These veggies are so simple and easy to prepare!! Depending on how many you make, they are perfect as a side dish or they could be used in a myriad of ways throughout the week. My twins love to snack on the carrots and I love to make simple veggie wraps to tide me over in between work and playtime.
Just grab a soft tortilla, add veggies, drizzle with balsamic vinegar and go!! No more hungry mommy at the end of the day!! I usually make double the recipe and it lasts all week. If you’re trying to snack healthily, this recipe is perfect for you, too. Munching on a few roasted veggies gives you crunch and flavor, minus the guilt!


Did I mention how simple this recipe is?? Just toss the veggies on a baking pan, add olive oil, salt and pepper, and voilà!! The roasting process along with quality Greek olive oil bring out amazing flavor in the vegetables.

Easy, Flavorful Roasted Vegetables
Ingredients
- 1.5 lb. mixed, fresh broccoli, cauliflower, and carrots
- 3 tbsp. Greek olive oil
- Greek sea salt and freshly ground pepper to taste
Instructions
Preheat oven to 425 degrees.
Line a baking pan with veggies and drizzle olive oil on top.
Sprinkle with salt and pepper.
Toss with your hands to thoroughly coat all of the vegetables.
Roast for 15 minutes.
Using a wooden spoon, move all of the veggies around the pan.
Continue to roast for 10 minutes.
Serve or allow to cool and refrigerate until needed.
