Easy, Flavorful Roasted Vegetables

September 5, 2013 • Babies, Toddlers & Kids, Side Dish, Uncategorized, Vegetarian

These veggies are so simple and easy to prepare!!  Depending on how many you make, they are perfect as a side dish or they could be used in a myriad of ways throughout the week.  My twins love to snack on the carrots and I love to make simple veggie wraps to tide me over in between work and playtime. :)   Just grab a soft tortilla, add veggies, drizzle with balsamic vinegar and go!! No more hungry mommy at the end of the day!! I usually make double the recipe and it lasts all week.  If you’re trying to snack healthily, this recipe is perfect for you, too.  Munching on a few roasted veggies gives you crunch and flavor, minus the guilt!
Did I mention how simple this recipe is??  Just toss the veggies on a baking pan, add olive oil, salt and pepper, and voilà!! The roasting process along with quality Greek olive oil bring out amazing flavor in the vegetables.
