Easy Mojitos Mediterranean Baby-2It’s 5 o’clock somewhere, right?!? Whether you’re planning a cocktail party, a dinner party, or just want to enjoy a cocktail on the porch, this Easy Mojito recipe is perfect.

I am a huge fan of the signature cocktail at parties for a myriad of reasons.  First and foremost, you don’t have to stock a full bar, opting instead on a quality cocktail to offer guests.  I always offer beer and wine as well, but offering only one type of mixed drinks helps with planning and costs.

My brother-in-law made some killer mojitos at a cookout a few weeks ago.  Ever since then, I’ve been trying to create an easy recipe that I could share with you.  This simple, fresh, fast recipe is a perfect way to try and make the summer last a few more weeks!
Easy Mojitos

Ingredients

  • 1/2 ounce simple syrup
  • 1 1/2 ounces white rum
  • 2 cups ice
  • a few leaves of fresh mint
  • juice of 1/2 lime and an extra slice for garnish
  • lemon lime seltzer water

Instructions

Muddle the mint, reserving one leaf for garnish. Add to a fresh cocktail glass. Fill with 1 cup ice.

In mixer, combine syrup, rum, remaining ice, and lime juice. Shake vigorously and pour over the glass of ice and muddled mint.

Top off the cocktail with seltzer water and an extra mint leaf and lime slice.
