Fried Green Tomatoes w/Arugula Salad

This recipe is the ultimate blend of indulgence and fresh, healthy, bright eating :)  The peppery arugula and feta salad just blends so well with the crisp, fried green tomatoes.  This is not one for the kiddos as a whole, but I did offer the arugula sans dressing to my twins.  Needless to say, they were not impressed.   This recipe really works when you’re planning a play date with other moms.  You can have the tomatoes already fried and warming in the oven and the salad ready in the fridge.  Once you have the kids all set up, you can plate this meal for the moms in a few seconds.



You’ll want to slice the tomatoes about 1/8 inch think.


Set up a standard breading station and just work your way through it.  The breading process is definitely my least favorite, but once it’s done, you’re good to go.


Make sure to thoroughly drain your tomatoes after they’re fried.  I place a few paper towels in the bottom of a glass baking dish and then layer tomatoes and paper towels to the top of the dish.  I place the whole thing in the oven on warm until I am ready to plate.



Fried Green Tomatoes w/Arugula Salad


  • 4 large green tomatoes
  • 2 cups flour
  • 2 cups Italian breadcrumbs
  • 1/2 cup parmesan cheese
  • 2 eggs, beaten
  • 6 cups arugula
  • 1/2 tbsp. apple cider vinegar
  • juice of 1/2 lemon
  • 1 tbsp. olive oil
  • 1/4 cup feta cheese
  • vegetable oil for frying


Wash and slice the tomatoes about 1/8 inch thick.

Set up a standard breading station with flour, eggs, and Italian breadcrumbs mixed with the parmesan cheese.

Dip the tomatoes in the flour, then eggs, and then breadcrumb/cheese mixture and set aside to be fried.

In the meantime, fill your frying pan with vegetable oil about 1/4 inch deep. Heat the oil on medium-low and begin to fry the tomatoes until golden brown.

Set aside on paper towels to drain.

In the meantime, combine the arugula, feta, olive oil, vinegar, and lemon juice.

Plate the tomatoes and top with the arugula salad. Serve.
