Greek Artichokes and Lima Beans

This recipe is so simple, delicious, and healthy!

Many Greek families I know make a version of this recipe, but I really worked to streamline it and make it as simple and packed with flavor as possible.  This is also a great recipe if you’re watching your waisteline.  It can be eaten as is or served over rice, so you determine whether you want to add the carbs.  This is one of my mom’s favorite recipes as well as mine…and my kids love the sauce over rice. It’s also perfect to take to a dinner party as a side.  Trust me, if you do, your friends will want the recipe :)  Enjoy!

Greek Artichokes and Lima Beans

Ingredients

  • 3 cups chicken stock
  • 3 cloves garlic, chopped
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 2 14 oz. cans artichokes, roughly chopped, reserve the juice from one can
  • 2 lbs. frozen lima beans
  • freshly ground black pepper
  • olive oil for drizzling

Instructions

Preheat the oven to 350 degrees.

Over medium-low heat, melt butter. Add flour and wisk together until golden brown.

Add juice from one can of artichokes and wisk. Add chicken stock and wisk. Add garlic and combine. The sauce will slighly thicken. Remove from heat.

In a large baking dish, add lima beans and artichokes. Toss together.

Pour the sauce over the lima beans and artichokes. Season lightly with black pepper.

Cover and bake for 45 minutes.

Remove from oven, uncover, and drizzle with olive oil.

Serve by itself as a side dish or over rice for a complete meal.
