Harvest Filo Cups


Can you believe these sweet treats are filled with apples and butternut squash?Amazingly, they are the perfect compliment to one another, especially when you add vanilla, cinnamon, brown sugar AND dark Jamaican rum.  I made these for the Farm to Table Pittsburgh’s Harvest Table event last weekend.  As promised, I will be posting all three of the recipes from my tasting menu this week…just in time for Thanksgiving dessert planning!

Harvest Filo Cups

The only labor intensive part of this recipe is the peeling and dicing of the apples and squash.  Other than that, it’s simple and super easy to prepare ahead of time.  You can even freeze the filling for when you need it.

Harvest Filo Cups w/Rum Reduction and Vanilla Mascarpone Cream


  • 30 filo cups. They usually come in packages of 15 and can be found at your local grocery stores.
  • For the filling:
  • 5 gala apples, peeled and diced (small)
  • 1/2 butternut squash, peeled and diced (small)
  • 1/4 tsp. cinnamon
  • 1 tsp. pure vanilla extract
  • 1 cup packed brown sugar
  • 2 tbsp. salted butter
  • 1 tbsp. dark Jamaican rum
  • For the cream:
  • 1 pint whipping cream
  • 2 tbsp. mascarpone cheese
  • 1 tsp. pure vanilla extract
  • 1/8 tsp. cinnamon
  • 1/4 cup powdered sugar


Combine all of thefilling ingredients, except the rum, in a large saute pan over medium low heat.

Continue to stir every few minutes until the apples and squash are fork tender, about 15-20 minutes.

Add rum and continue to saute for five minutes or until the liquid in the pan is reduced by half.

Remove from heat.

In the meantime, in a medium bowl, combine all of the cream ingredients and whisk to desired consistency. Use a stand mixer, if possible, and let it do all of the work. If you don't have a stand mixer, use an electric hand mixer.

Line the filo cups on a platter. Spoon the filing into the cups and top with cream.

Note: You may also freeze the filling for later use.
