This hearty tuscan soup has a variety of ingredients from lite sausage (or sauce-see-gee as my kids call it) to protein packed beans and heart healthy veggies that are sure to please all of your friends and family.  Set ‘n forget it for the perfect weeknight meal or halftime offering.  Afterall, it’s finally football season!!

Hearty Tuscan Slow Cooker Soup by Mediterranean Baby with Hamilton Beach-1
Hearty Tuscan Slow Cooker Soup

Ingredients

  • 13 oz. lite smoked sausage, sliced
  • 1 large white potato peeled and small diced
  • 8 oz. sliced button mushrooms
  • 1 lb. frozen spinach
  • 1 28 oz. can diced tomatoes and juice
  • 1 48 oz. can chicken broth
  • 1 15.5 oz. can great northern beans, drained and rinced
  • 2 cloves garlic, minced
  • 1/2 cup julienned carrots
  • salt and pepper to taste
  • shredded Parmesan cheese to garnish

Instructions

1. In a cast iron skillet, brown sausage, mushrooms, and potatoes with a drizzle of olive oil. Add to slow cooker.

2. Add the remaining ingredients to the slow cooker and cook on low heat for 8 hours or high heat for 4 hours. That's it!!!

3. Ladle to into bowls for serving and top with shredded Parmesan cheese.

    I found a recipe for a slow cooker beef stroganoff many years ago and it was always a family favorite. My adult kids and their spouses love it too, even now! Pretty soon I will be able to make it for my one year old grandson for the first time as soon as he gets a few more teeth!!!

    Hands down…my FAVORITE slow cooker recipe comes from mediterraneanbaby!!! Slow Cooker Giardinera Chuck Roast!!! I’ve made it twice and both times it has been mouth watering, full of flavor and a huge hit with the family! Mmmmmm!
