Ice Cream Scoop Sugar Cookies

We are in holiday cookie baking mode at our house and these Ice Cream Scoop Sugar Cookies were a huge hit!

I made them for my sister-in-law’s wedding last weekend and had so much fun to dressing them up with icing and sprinkles to match her winter/snowflate theme.  A few guests even tracked me down to ask for the recipe, so I know they were an overall crowd-pleaser, too!  Did I mention, how easy they are? The ice cream scoop method really simplifies them and adds to their adorable look.  Plus, they freeze well and can be fosted later!  I think you’ll love them.  They are slighly sweet…the kind of cookie that pairs perfectly with your morning coffee, but is versatile enough to dresss-up any party or cookie try.

Ice Cream Scoop Sugar Cookies


  • Cookies -
  • 4 cups all purpose flour
  • 2 tbsp. baking powder
  • 1 cup sugar
  • 2 large eggs
  • 2 sticks butter (salted), softened
  • 2 1/2 tbsp. vanilla
  • Icing -
  • 1 - 1 1/2 cup confectioners' sugar
  • 2 tbsp, light corn syrup
  • 2 - 2 1/2 tbsp. milk
  • 1/2 tsp. vanilla
  • food coloring, if desired
  • sprinkles, if desired


1. Preheat oven to 375.

2. In a bowl, combine flour anf baking powder. Set aside.

3. In your stand mixer, cream sugar and eggs. Add vanilla. While mixing, slowly add flour and baking powder until the ingredients are thoroughly combined and dough is formed.

4. Cover and place dough in the refigerator for at 30 minutes.

5. Remove from fridge and, using an ice-cream scoop, line two cookie sheets with scooped cookie dough about 2 inches apart.

6. Bake for 9-11 minutes until slightly golden on top.

7. Cool and serve, ice, or freeze.


Using your stand mixer, combine sugar and milk until smooth. Add corn syrup and vanilla. Blend. Add food coloring, if desired.

Lay out parchment paper and line with cookies.

Using a spoon, drizzle glaze over cookies and add sprinkles.

Allow to completely dry and harden.
