Kale Greens and Beans

I am always trying to create different versions of greens and beans, trying to master the classic in my own way that my family will enjoy.  It is one of my favorite comfort meals.  This particular version is a one-pot wonder that only takes about 30 minutes to prepare from start to finish.  I think you’re going to love it!

My son has started to waiver in his love of beans, but my oldest twin has picked up where he left off.  She adores them and LOVES these greens and beans.  Between her, my husband, and me, we ate the whole pot within 6 hours!

Kale Greens and Beans

Ingredients

  • 1 28 oz. can crushed tomatoes
  • 1 16 oz. bag kale
  • 4 cups chicken stock
  • 5 cloves garlic, chopped
  • 2 15.5 oz. cans Great Northern beans, drained and rinsed
  • salt and pepper
  • 1 tbsp. olive oil
  • Parmesan cheese for garnishing

Instructions

Drizzle olive oil into a large enamel caste iron pot. Add garlic and saute over medium-low heat until fragrant.

Add half of the kale and chicken stock to the pot.

Add crushed tomatoes and stir, allowing the kale to absorb into the liquid.

Add remaining kale and salt and pepper.

Bring to a boil, cover, and reduce heat to a low simmer.

Simmer for 20 minutes.

Serve with freshly grated Parmesan cheese.
