Lima Bean and Sweet Pea Mafalde

Don’t underestimate this dish because I just said lima beans!!  I’m serious!  This recipe will cater to those who already love lima beans and convert those who don’t think they like them.  Between the sautéed garlic, red onion, sweet peas, and chicken stock, this dish is flavorful, satisfying, and simple; another classic Mediterranean dish.



Lima Bean and Sweet Pea Mafalde


  • 1 lb. mafalde pasta (ribbon pasta)
  • 2 tbsp. olive oil, plus extra for drizzling
  • 4 cloves garlic, minced
  • 1/2 red onion, thinly sliced
  • 1/2 cup frozen peas
  • 1 15.5 oz. can lima beans, drained and rinsed
  • 1/4 cup chicken stock
  • pinch sea salt
  • pinch black pepper
  • parmesan cheese for garnishing
  • fresh basil, chopped, for garnishing


Bring a large pot of water to a boil.

In the meantime, sauté garlic in olive oil until fragrant.

Add red onion and sauté for three minutes.

Add lima beans, salt, and pepper and sauté for five minutes.

Add peas and chicken stock and reduce heat to a low simmer.

Add pasta to the water and boil until al dente.

Drain the pasta and toss in the sauté pan with the sauce.

Garnish with freshly grated parmesan cheese and basil. Drizzle with olive oil.
