Last weekend, Mediterranean Baby partnered with Widtree for a “Figure Friendly” Freezer Meal Workshop. It was fabulous! I had never heard of Wildtree or freezer meal workshops until an old elementary/middle/high school friend reached out to me on Facebook and shared it with me. (Her name is Tammy Badstibner and she’s an Independent Wildtree Representative.) I loved the idea of offering some of my friends the opportunity to prepare ten meals in an hour with simple, healthy, and natural ingredients! In advance of our workshop, all of my guests ordered a bundle of Wildtree products and prepped proteins and veggies, per Tammy’s easy instructions. I had my butcher cut all of my meats and I simply labeled them and placed them in freezer bags. At the workshop, we added spice mixes, grapeseed oils, salt and pepper, and citrus to our freezer bags and voila!! At the end of the hour, we each had TEN meals in our freezers (or coolers), with labels on each of them, including cooking directions. Plus, Tammy gave us all sheets with every meal listed to tape in our freezers so that we could remember what’s in there!
So far this week, I have made the Baked Chicken Scampi (pictured above, recipe below) and the Greek Turkey Burgers – – both were excellent and I was thrilled not to worry about meal prep after a long day in Court! I am working on some Mediterranean Baby recipes using some of the Wildtree products from the workshop, so you may notice the name here and there in my ingredient lists. I just love that the products are all natural and low in sodium, so you can decide how much salt to add!!

Some of the other meals we prepped included Garlic & Herb Pork Chops, Italian Chicken Tenders, Herb Crusted Tilapia, Lemon Rosemary Pork Tenderloin, Opa! Greek Kabobs, Shrimp Scampi, Zesty Lime Fajitas, and Easy Tacos.
