Mediterranean Tuna Salad

I have never been a tuna fish lover.  I have tried and tried and tried some more, and still, I can’t say that I love it.  I do however, LOVE all of the flavors in this recipe and have thoroughly enjoyed this tuna fish sandwich.  I have also had it taste tested by some tried and true tuna fish lovers and they say it’s delicious :)  So, to all of you tuna fans and those who want to give it another try, give this recipe a whirl.  The capers and the Kalamata olives combined with golden balsamic vinegar and lemon juice work so well together.  The simple crunch of the celery finishes it off with some finely diced shallots.  Oh, and did I forget to mention the best part??  It’s perfect for your waistline :)

Ingredients

  • 2 5 oz. cans Genova solid white tuna in olive oil
  • 1 tbsp. capers
  • 1 shallot, small dice
  • 2 tbsp. pitted Kalamata olives, small dice
  • 4 celery stalks, small dice
  • 2 tbsp. golden balsamic vinegar
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • pinch black pepper

Instructions

In a medium mixing bowl, combine all of the ingredients and mix thoroughly.

Cover and refrigerate for at least 30 minutes to allow the flavors to marry.

Serve with pita bread or on its own.

    Mouth-watering!I have never seen Genova Tuna-specialty store such as Delallo’s?

    • Mrs. Balogh, I’m not sure if DeLallo’s carries it, but I have found it at Community Supermarket and some other local Italian markets. I have also found it in the Strip District at places like Penn Mac. I wouldn’t be surprised if Giant Eagle carried it in their Italian section at some stores. I also checked on Amazon.com and they carry it, so you could order it there. I hope that helps! :)
