Open-Faced Fried Egg, Tomato, Mozzarella, and Cilantro Salsa Sandwich

I ate lunch yesterday!!!  Yes, all of the stars aligned and all of my kids were miraculously napping at the same time, for a brief time, and I ATE LUNCH!!!!  In a pinch, you can whip up this fast salsa, fry an egg, and nestle it all on top of toasted, crusty ciabatta bread for a quick, fresh, delicious lunch.


I wish I could figure out how to consistently replicate those days when nap time hits at the same time for everyone.  I know right now my cousin, Jen, a.k.a the baby whisperer, is shaking her head at me.  In her world, everything runs like clockwork.  In my world, sometimes we run to the beat of our own drums. :)


Shhh…don’t tell anyone, but I don’t really like the yolk. :(  So, I just ate my open-faced sandwich sans the yolk.  I also had some veggie chips and a few pickles.  Bon appetit!!


And then everyone woke up and we had a great afternoon together :)

Open-Faced Fried Egg, Tomato, Mozzarella, and Cilantro Salsa Sandwich


  • 1 egg
  • 1 mini ciabatta bread, halved lengthwise
  • 1 tomato, diced
  • small bunch of fresh cilantro, chopped
  • 4, 1/4 inch slices of a fresh mozzarella ball, diced
  • olive oil for drizzling
  • pinch of Greek seasoning
  • 1/2 tsp. rice wine vinegar


Toast ciabatta bread in the oven at 350 for 5 to 10 minutes, until it's toasted to your liking.

Drizzle a frying pan with olive oil and heat on medium-low.

Crack an egg and gently drop into frying pan. Sprinkle egg with Greek seasoning and continue to cook until you reach desired doneness.

In a small mixing bowl, combine tomato, mozzarella, and cilantro. Add rice wine vinegar, a drizzle of olive oil, and a sprinkle of Greek seasoning.

Place the toasted bread on a plate, top it off with the salsa, and then the egg.
