Oven Roasted New Potatoes w/Greek Oregano and Garlic

These potatoes are a great side dish for a Sunday dinner.  You’ve got to monitor them as they bake and be sure to move them around the roasting pan every 20 minutes, but they are worth the effort.  The fresh, roasting garlic and Greek oregano make your house smell wonderful, too.  Sometimes, it just comes down to meat and potatoes and this recipe fits the bill for satisfying potatoes.  My little ones loved them fresh out of the oven and also loved them served cool the next day as they dipped them in ketchup for lunch!






Oven Roasted New Potatoes w/Greek Oregano and Garlic


  • 2 1/2 lbs. new potatoes, washed and quartered
  • 1 tsp. dried Greek oregano
  • 3 cloves garlic, roughly chopped
  • salt and pepper
  • olive oil for drizzling


Preheat the oven to 350 degrees.

In the meantime, place the quartered new potatoes in a medium bowl.

Drizzle with olive oil to coat all of the potatoes. Stir.

Crush the Greek oregano in your palm and add to potatoes.

Add garlic to potatoes.

Liberally salt the potatoes.

Add a pinch of freshly ground pepper.

Combine all ingredients using a wooden spoon to thoroughly coat all of the potatoes.

Spread the potatoes out on a baking sheet/pan.

Place in the oven and set the timer for 10 minutes.

Move the potatoes around the pan.

Roast for 20 minutes and move the potatoes around the pan again.


Turn on the broiler and move oven rack to the top position.

Broil for 5 minutes.
