These potatoes are a great side dish for a Sunday dinner. You’ve got to monitor them as they bake and be sure to move them around the roasting pan every 20 minutes, but they are worth the effort. The fresh, roasting garlic and Greek oregano make your house smell wonderful, too. Sometimes, it just comes down to meat and potatoes and this recipe fits the bill for satisfying potatoes. My little ones loved them fresh out of the oven and also loved them served cool the next day as they dipped them in ketchup for lunch!
