Perfect Summer Greek Salad

It is finally time to make the GREATEST Greek salads of the year!!! It also happens to be my favorite time of the year for fresh produce.  I love late summer tomatoes and cucumbers and eat them on a daily basis until the fresh crop has run out.  This recipe is a guaranteed crowd pleaser.  In fact, I took this salad to our dear friends’ house over the weekend for a pool party and by the time my husband went to grab some, it was gone.  Don’t feel too badly for him; he eats it almost every day!!!  Enjoy the rest of your summer and let this salad help you enjoy the flavors of the season!!

Perfect Summer Greek Salad

Ingredients

  • 1 green pepper, sliced
  • 2 cucumbers, quartered and sliced
  • 2 large tomatoes, sliced
  • 1 Spanish onion, sliced
  • 2 tbsp. capers
  • 1 large hunk of feta cheese
  • 1 tbsp. Greek oregano
  • 1 tsp. Greek sea salt
  • Balsamic vinegar for drizzling
  • Greek olive oil for drizzling
  • 1 lemon quartered

Instructions

Line a serving platter with green pepper.

Top with onion and then tomatoes.

Top with cucumbers.

Crumble feta over the salad.

Top with capers.

Sprinkle with oregano.

Sprinkle with half of the salt, drizzle with balsamic vinegar and olive oil, and toss gently.

Sprinkle with remaining salt and gently toss again. Taste and add vinegar, olive oil or salt as needed. Remember, the capers and feta are salty, so you hardly need to add salt.

Squeeze lemon wedges over the salad and serve!!
