Pumpkin Spice Zucchini Bread by Mediterranean Baby-2

‘Tis the season for pumpkin EVERYTHING!

I am a huge fan of the pumpkin craze and wanted to create a sweet, somewhat healthy bread that my kids would enjoy with the bonus of hidden veggies.  I took a classic zucchini bread and added cinnamon, nutmeg, and pumpkin pie spice.  It’s even better if you add a sprinkle of cinnamon sugar on each warm or toasted slice.

Pumpkin Spice Zucchini Bread

Ingredients

  • 1 1/2 cup unpeeled, shredded zucchini
  • 1 1/2 cups flour
  • 1/4 tsp. baking powder
  • 1/2 tsp. baking salt
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/4 tsp. nutmeg (optional)
  • 1/2 tsp. salt
  • 1 egg
  • 1 cup sugar
  • 1/4 cup vegetable oil

Instructions

Preheat oven to 350 degrees and grease your loaf pan.

In the meantime, combine the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice, and nutmeg in a medium bowl. Set aside.

In your stand mixer, combine sugar, egg, and oil and thoroughly combine. Fold zucchini into the sugar mixture.

Slowly add flower mixture to the batter while mixing.

Pour the batter into the loaf pan.

Bake for 40 minutes until a toothpick comes out clean from the center of the loaf.

Remove from the loaf pan, slice, and serve with butter and cinnamon sugar.
