Rainbow sprinkle cookies are for everyone.

They make my kids light up with excitement and even I can’t turn away from them.  Not only that, but they are so easy to make that you really don’t need to buy the store mix.  Just get your stand mixer or your mixing bowl and hand mixer ready.

Rainbow Sprinkle Cookies

Ingredients

  • 2 cups all purpose flour
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup white granulated sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 sticks unsalted butter, room temperature
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/4 cup rainbow sprinkles, plus a bit extra for topping

Instructions

Preheat oven to 350 degrees.

Line 2 cookie sheets with parchment paper. Set aside.

In a medium bowl, mix together flour, baking soda, and salt. Set aside.

In your stand mixer, cream together butter, sugar, eggs, and vanilla.

Slowly mix in flour mixture to form cookie dough.

Add sprinkles and combine.

Using an ice cream scoop, place cookie dough on your cookie sheets a few inches apart.

Bake for 11 minutes.
