This is the easiest and tastiest dessert to take to your 4th of July festivities.  Firstly, who doesn’t love a brownie?  Secondly, who isn’t going to love the creaminess of vanilla Greek yogurt spiked with lemon zest and a dash of whipped cream??  Thirdly, who doesn’t love the festive, juicy berries?  Win, win, and win, ladies and gentlemen! Plus, my kids adored this dessert and I was thrilled that they weren’t licking loads of sugary frosting.  You will look like a dessert goddess if you present this to your hosts.  Happy 4th!!

Red, White & Blue Brownie with Greek Yogurt Glaze

Ingredients

  • 1 box brownie mix, prepared according to directions and baked in a 9 inch round pan.
  • 1/4 pint heavy whipping cream, whipped
  • 2 5.3 oz. containers of non-fat vanilla Greek yogurt (I prefer Dannon Oikos)
  • zest of 1 lemon
  • 1/4 cup red raspberries
  • 1/2 cup blackberries
  • 3/4 cup blueberries
  • 1 cup sliced strawberries

Instructions

After you've prepared the brownie, allow to slightly cool and tap out onto a serving plate.

In a medium mixing bowl, add your Greek yogurt and lemon zest.

Gently fold in the whipped cream.

Evenly spread the whipped cream across the top of your brownie.

Decorate with berries, beginning with the outer circle of strawberries.

Garnish your serving plate with fresh mint.

Slice and serve like a cake.
