This Rigatoni with Bacon, Sage and Brown Butter is as simple and straight forward as it sounds.   While your pasta boils, you can prepare this simple sauce in no time.  I think of it as one of my “less is more” recipes, great for the whole family.  From tiny toddler taste-buds to more sophisticated palates, this recipe is a crowd pleaser!

Last weekend, I treated the kiddos to a Sunday breakfast of cinnamon rolls, fruit, and of course, bacon.  It’s their favorite breakfast, reserved for weekends and trips to Yiayia’s (my mom’s).  That being said, in my attempts to limit the bacon intake, I’m always left with extra uncooked bacon.  Not this time!!  Before I wrapped up my unused bacon to wait out its days in the fridge, I eyed up my herb garden and sage came to mind.  A few minutes later, I was boiling water and working out this recipe.  I think you’ll love it!

Rigatoni with Bacon, Sage and Brown Butter

Ingredients

  • 4 strips bacon, small dice
  • 8 large sage leaves, chopped
  • 2 tbsp. butter
  • 1 tbsp. olive oil
  • 1 lb. rigatoni
  • Parmesan cheese for tossing and garnishing

Instructions

Bring a pasta pot full of water to a boil, salt liberally, and add rigatoni.

In a medium saucepan, brown and crisp bacon over medium-low heat.

Using a slotted spoon, remove bacon and drain on a paper towel lined plate.

Using a paper towel, wipe, but don't wash, the bacon grease from the pan.

Return the pan to the stove and melt, then brown the butter in the pan.

Add the sage and cooked bacon to the pan. Turn off the heat.

Drain the pasta when al dente, reserving 1 cup of the starchy cooking water for the sauce.

Toss the pasta in the bacon, sage, and brown butter sauce, adding the starchy pasta water, olive oil, and freshly grated Parmesan cheese to your liking.

Top with freshly grated Parmesan cheese.

      cotsuintents and emission implies doing so is effective. what the legislation DOES do is give the FDA authority do so IF doing so were appropriate for the protection of the public health. who knows — perhaps someday scientists will figure out that certain reductions do, in fact, make cigarettes less hazardous. as for your final paragraph, i’ll paraphrase shakespeare: methinks the doctor doth protest too much. why won’t you address the real question, which relates to how tobacco companies should be allowed to market their products?
