These tomatoes can be served as a side dish, an appetizer, or alone as a simple lunch. They are delicious!! My favorite way to enjoy tomatoes is always by roasting them first. Whether they’re added to a sauce or stand alone as in this dish, roasted tomatoes never disappoint. These tomatoes are simply roasted with olive oil and sea salt. Then, they’re topped with pesto, breadcrumbs, and Parmesan cheese and broiled for a few minutes to ensure a good crunch I nestled my tomatoes in a crusty French baguette! YUM!!
