Roasted Pesto Tomatoes

These tomatoes can be served as a side dish, an appetizer, or alone as a simple lunch.  They are delicious!!  My favorite way to enjoy tomatoes is always by roasting them first.  Whether they’re added to a sauce or stand alone as in this dish, roasted tomatoes never disappoint.  These tomatoes are simply roasted with olive oil and sea salt.  Then, they’re topped with pesto, breadcrumbs, and Parmesan cheese and broiled for a few minutes to ensure a good crunch :)  I nestled my tomatoes in a crusty French baguette! YUM!! FYI, DeLallo’s Simply Pesto is perfect for this recipe!

Ingredients

  • 8 Roma tomatoes, halved
  • 1 tsp. coarse sea salt
  • olive oil for drizzling
  • 2 tbsp. pesto (I use DeLallo Simply Pesto)
  • 2 tbsp. Italian seasoned bread crumbs
  • 2 tbsp. freshly grated Parmesan cheese

Instructions

Preheat the oven to 425 degrees.

In the meantime line a baking sheet with the tomato halves, drizzle with olive oil, and sprinkle with sea salt.

Roast in the oven for 15 minutes.

Allow to cool to room temperature.

Spread pest on the tops of each tomato.

Sprinkle with breadcrumbs and Parmesan cheese.

Turn your oven broiler to high heat.

Place the tomatoes under the broiler for five minutes.

Serve!
