This Rustic Super Soup is so simple and so packed with healthy, fresh ingredients!

I named it the Rustic Super Soup because of all of it’s super food elements.  From kale to fresh cherry tomatoes, to garlic and even your classic mirepoix, this soup packs a nutritional punch.  Plus, you can add meatballs, chicken, or even hot sausage depending on your taste buds for protein. I added some ditalini pasta for my little ones and we all enjoyed this 20 minute soup.  My kids love to dip fresh bread into their soup as a treat!

Rustic Super Soup

Ingredients

  • 2 32 oz. boxes chicken stock
  • 3 cups fresh kale
  • 2 celery stalks, diced
  • 1 cup chopped carrots
  • 1 small onion, diced
  • 3 cloved garlic, minced
  • 1 1/2 cups cherry tomatoes, cut in half
  • 1 cup uncooked ditalini pasta
  • 1 tsp. Greek oregano
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 2-3 tbsp. half and half (optional)
  • Choose one: 1 lb. bulk Italian hot sausage, browned OR 2 cups cooked chicken, shredded or diced OR 2 cups meatballs, cooked

Instructions

In a large soup pot, saute carrots, celery, onion, tomatoes, and garlic in olive oil until garlic is fragrant.

Add chicken stock, oregano, and season with salt and pepper. Bring to a boil.

Add kale, ditalini, and protein (I used meatballs I had already prepared, baked, and frozen. I popped them right from the freezer into the pot.)

Reduce heat to simmer and cover for ten minutes.

Add half and half and stir.

Serve!
