Sausage, Pork Chops & Sauerkraut

This type of recipe will be featured in almost every Pittsburgh home tomorrow on New Years Day.  It’s just what we do! In fact, I was listening to KDKA 1020 the other morning and listeners were calling in to share their favorite versions of this hometown meal.  I used some of those ideas as well as my own to create this recipe and I am sure it will be a great way to start 2014!! I combined andouille & chorizo sausage with boneless pork chops, fresh sauerkraut from McGinnis Sisters, one apple, one onion and that’s all yinz guys :).  (For the record, I have never said “yinz” in my life, but it does warm my heart to hear the Pittsburghese version of Y’all.)  This recipe is slow cooked, tender, and perfect to pair with Breadworks sausage rolls and a cool crisp Peroni or an IPA.  Best of all, your little ones will LOVE the tangy pork chops and the adults will love the spicy sausage.  It works perfectly for the whole family! Sausage, Pork Chops & Sauerkraut

Ingredients

  • 4 boneless pork chops (thick cut)
  • 3/4 lb. andouille sausage
  • 3/4 lb. chorizo sausage
  • 2 quarts fresh sauerkraut (McGinnis Sisters)
  • 1 apple, peeled and chopped
  • 1 large white onion, diced
  • olive oil
  • salt and pepper

Instructions

In a slow cooker, combine sauerkraut, apple, and onion.

In the meantime, in a large frying pan, heat a drizzle of olive oil over medium-low heat. Add sausage and brown on all sides. Add to the slow cooker.

Season the pork chops with salt and pepper. Using the same frying pan and oil, add pork chops and brown on both sides, forming a golden-brown crust. Add to the slow cooker.

Gently combine all ingredients.

Cover and cook on low for 6 to 8 hours to fork tender.
