Slow Cooker Giardinera Chuck Roast

What do you think about a recipe with only 2 ingredients??Other than dry rubbing this chuck roast the night before, all you have to do is sear it and add the roast and one large jar of Delallo’s Mild Giardiniera to your slow cooker for 8 hours on low.  I don’t know if it’s the vinegar in the giardiniera or the searing of the roast, but combined, this is my absolute favorite slow cooker recipe.  It’s fork tender and full of flavor!  I serve it over rice with a hunk of feta cheese.  YUM! The best part is that it’s perfect for all ages; my kids adore it, too! In fact, I thought up this recipe over a late night snack (giardiniera) with my youngest twin the other night.  At nineteen months old, she loves giardiniera and meat, so voila! :)  This recipe is for her!

Giardinera Chuck Roast


  • 1 whole chuck roast (4 to 5 lbs.)
  • 1 tbsp. coarse Greek sea salt
  • 1 tbsp. Mediterranean Rub (Dean and Deluca's or Wildtree)
  • 1 tsp. black pepper
  • 1 tbsp. garlic powder
  • 1 25.5 oz. jar Mild Giardiniera (DeLallo's)
  • 4 whole cloves garlic, optional
  • olive oil


The night before, combine the sea salt, Mediterranean rub, pepper, and garlic powder to create a dry rub.

Drizzle the chuck roast with olive oil and rub the entire roast with the dry rub. Cover and place in the refrigerator overnight.

The next day, take the roast our of the fridge and allow to come to room temperature.

In the meantime, heat a caste iron skillet over medium heat.

Place the roast directly into the hot skillet, searing each side until a dark crust forms, sealing in the flavor of the meat.

Place the chuck roast into the slow cooker and pour the jar of mild giardiniera over the top.

Toss in garlic cloves and cover.

Cook on low for 8 hours. If possible, turn the roast over after 4 hours and spoon juices and veggies over the top. Cover and continue to cook.

Serve over rice with feta cheese on the side.
