I included cherry tomatoes in my herb garden this year and have loved watching them grow. It has been wonderful to share the growing process with my kids as well. My son was fascinated by the flowers that drop off to reveal little budding tomatoes.
Today, some of the tomatoes were finally ready to be picked. All three of my little ones helped pick them and had so much fun doing it. From there, we all came inside and I whipped up this fresh pasta dish with my fresh tomatoes, basil and flat leaf Italian parsley. This whole dish will only take as long as it takes to cook your pasta! Cheers to summer
Ingredients
- 1 box tricolor bow tie pasta
- 2 cups fresh cherry tomatoes, cut in half
- 2 large garlic cloves, diced
- 1/4 cup olive oil
- 1 bunch fresh basil
- 1 bunch fresh flat leaf Italian parsley
- salt and pepper
- 1/2 cup crumbled feta
Instructions
Cook the pasta to al dente, drain, and set aside.
In a medium saute pan, add garlic, tomatoes, and olive oil.
Saute over medium low heat for 5 to 10 minutes, until tomatoes burst.
Season with salt and pepper.
Add the pasta to the saute pan and combine.
Add the torn basil, parsley, and feta and toss.
Serve!
