Summer Pastina w/Fresh Corn, Zucchini, and Ham

This is the perfect summer soup for your little ones.  All three of my kids love this “soupa” and I love that the corn and zucchini are in-season this time of year to make it really farm fresh!!! Did I mention how simple this dish is?? It only takes about 20 minutes to make and it should last you for a few lunches throughout the week.  You can also pair it with a classic grilled cheese!!






Summer Pastina w/Fresh Corn, Zucchini, and Ham


  • 42 oz. low sodium chicken stock
  • 2 cups water
  • 1/2 lb. pastina
  • 1 large ear of corn
  • 1 large zucchini, diced
  • 1 white onion, finely diced
  • 2 cloves garlic, minced
  • 1 ham steak, diced
  • olive oil for drizzling


Heat a medium soup pot over medium-low heat and drizzle with olive oil.

Add onion and garlic until garlic is fragrant.

Add ham and allow to mildly caramelize, about 3 minutes.

In the meantime, with a sharp knife, shave the corn off of the stalk.

Add zucchini and corn, combining thoroughly, about 2 minutes.

Add chicken stock and water and bring to a boil.

Add pastina and cook until al dente.

Remove from heat and serve!!
