Every year, I make tiramisu for my husband on his birthday. He doesn’t really like sweets, but he loves tiramisu.
This recipe is simple and delicious and the mascarpone cream is to die for! I don’t let the kiddos eat it since the recipe calls for raw egg yolks, rum, and espresso, but it sure is a treat for adults. Unfortunately, I’ll have to pass on it this year as well since I am breastfeeding. Looks like the whole dessert goes to Frank-John! Happy birthday, babe! xo
Beat the egg yolks and sugar until pale yellow and creamy, about 5 minutes. Add 1 tbsp. espresso and mascarpone cheese. Blend until golden and creamy. Set aside.
Pour the remaining espresso and rum in a shallow bowl and begin to dip each lady finger into the coffee mixture, one at a time. Immediately place each cookie into a baking dish until you have lined the bottom of the dish with one layer of coffee dipped lady fingers.
Dollop half of the cream mixture on top of the coffee dipped cookies and spread evenly to coat.
Add another layer of dipped cookies on top of the cream and top with the second and final layer of remaining cream.
Garnish with chocolate shavings and refrigerate overnight.
