It’s also just a great side dish, even for us mashed potato lovers! We were hosting a “Friendsgiving” last weekend and much to my surprise, this recipe was the clear favorite among us all. I created this recipe for a dear friend who has completely cut carbs out of his diet. I wanted him to be able to indulge, too.
