Ultimate Slow Cooker Mashed Cauliflower

This is the perfect side dish for your loved ones who are avoiding gluten or carbs in general.

It’s also just a great side dish, even for us mashed potato lovers!  We were hosting a “Friendsgiving” last weekend and much to my surprise, this recipe was the clear favorite among us all.  I created this recipe for a dear friend who has completely cut carbs out of his diet.  I wanted him to be able to indulge, too.  At the end of the day, it really opened my eyes to how delicious and satisfying a gluten-free side can be.  I think you’ll all love this one!



Ultimate Slow Cooker Mashed Cauliflower


  • 2 lbs. fresh cauliflower florets
  • 4 cups chicken stock
  • 2 celery stalks, cut into large pieces
  • 2 shallots, peeled
  • 2 cloves garlic
  • 1 bay leaf
  • 2 tbsp. cream
  • 2 tbsp. sour cream
  • 4 tbsp. butter
  • salt and pepper


Place the cauliflower, celery, whole shallots, garlic, stock, and bay leaf in the slow cooker. Cover and cook on high for 4 1/2 hours.

Using a slotted spoon, transfer cauliflower and garlic only into large bowl or stand mixer. Discard remaining ingredients.

Add sour cream, cream, and butter and throughly blend/mash until smooth and creamy.

Season with salt and pepper.

Serve or return to slow cooker and set to warm until ready to serve.
