This salad is crisp, bright, and the refreshing flavor of the Meyer lemon juice takes it over the top. It’s a version of the classic “horiatiki salata” or “village salad” common in every taverna on the Greek isles. The kicker is that I used Meyer lemons to replace the red wine vinegar, fresh mozzarella to replace the feta, and topped it off with torn cilantro.
Meyer lemons are probably my favorite citrus fruit. If you haven’t tried them before, be sure to check your local produce markets and specialty stores for them ASAP. They are a cross between a lemon and an orange; tart, yet sweet.
Be sure to have some fresh, crusty bread on hand for dipping!!
Here’s my little trick to enjoy every bite of the salad and every bit of flavor from the Meyer lemons…keep half of a Meyer lemon in the salad bowl and continue to squeeze the juice as you eat. So good!!!
Ingredients
- 1 cucumber
- 1 ripe tomato
- 2, 1/4 inch slices of fresh mozzarella cheese
- small bunch of cilantro
- red onion (optional)
- For the dressing:
- juice of 1 Meyer lemon
- 1/2 Meyer lemon for extra squeezing as you eat :)
- 1 tbsp. olive oil
- 1/2 tsp. rice wine vinegar
- pinch of Greek seasoning
- pinch of coarse Greek sea salt
