Watermellon Salad w/Fig Infused White Balsamic Vinegar and Mint

Yes, plenty of people have caught on to adding fresh mint to their diced watermelon, but this recipe really takes it over the top with some fig infused white balsamic vinegar!! The hallmark of Mediterranean food is simple, fresh and flavorful and this salad fits the bill.  Oh, and did I mention that my toddler and my nearly 1 year old twins LOVED it??

I found this fabulous fig infused vinegar over the weekend at Giant Eagle Market District.   It is bright, sweet, and not too tart.  Overall, a perfect pairing with sweet watermelon and mint.

Watermellon Salad w/Fig Infused White Balsamic Vinegar and Mint

Ingredients

  • 1/2 large watermelon, diced
  • 10 mint leaves, chopped
  • 1 tbsp. fig infused white balsamic vinegar

Instructions

Combine diced watermelon, chopped mint leaves, and fig balsamic vinegar.

Mix thoroughly, cover and refrigerate for at least 20 minutes.

Mix again and serve.
