Garden Fresh Chicken Tortilla Soup

This is by far the GREATEST seasonal soup of the year!!! It combines the freshest of summer ingredients with lean protein, nutrients, and tons of flavor.  Best of all, it only takes about thirty minutes to prepare!  While the soup is simmering away on the stove, you can assemble some of the highlights of this dish…the toppings (limes slices, fresh cilantro, avocado slices, crushed tortilla chips, and melted cheese).  This dish is perfect for a family meal because you can pick and choose what everyone likes and customize each serving.  (My babies loved the tender chicken and I added some avocado and tortilla chips for dipping for my toddler.)  Classic. Simple. Fresh.

Garden Fresh Chicken Tortilla Soup


  • 1 lb. chicken breasts, cut into bite sizes pieces
  • 2 32 oz. containers chicken stock
  • 2 14.5 oz. diced tomatoes, undrained
  • 4 garlic cloves, minced
  • 1 large green bell pepper, diced
  • 1 large white onion, diced
  • 1 tsp. ground cumin
  • 2 tsp. chili powder
  • 1/8 tsp. black pepper
  • 2 cups frozen corn
  • 3 limes, quartered
  • 3 avocados, peeled and sliced
  • bunch fresh cilantro, torn
  • 1 bag tortilla chips
  • 2 cups shredded Mexican cheese


In a large pot, sauté onion, garlic, and green pepper.

Add chicken stock and tomatoes,

Add cumin, chili powder, and black pepper.

Bring to a boil.

Add chicken and continue to boil for 5 minutes.

Reduce heat to a simmer and continue to cook for 10 more minutes.

In the meantime, prepare the toppings, i.e. slice the limes and avocado, tear the cilantro, and crush the tortilla chips.

Set cheese aside as well.

To the pot, add frozen corn and return to a boil.

Immediately reduce heat to simmer.

Ladle the soup into bowls.

Top with avocado, cilantro, and squeeze fresh lime over the bowl.

Finish with crushed tortilla chips and cheese.
