I love to serve these potatoes with my Whole Garlic Rosemary Roasted Chicken.  They are so simple and so tasty.  Plus, if you drizzle some of the roast chicken juices over them and add a hunk of feta to your plate, it’s divine!

Roasted Skillet Potatoes


  • 7 large Idaho potatoes, washed, halved and quartered
  • 2 tbsp. butter
  • 1 1/2 tsp. garlic powder
  • salt and pepper


Using a cast iron skillet, place the butter and the potatoes over medium heat and allow to sizzle and brown in the skillet. The exterior browning and crisping process is the most important part of the recipe.

Add garlic powder and salt and pepper. Combine and toss potatoes with a wooden spoon.

Place in a 350 degree oven, uncovered, for 40 minutes, until fork tender.
