I love strawberry shortcake!! It’s been a favorite of mine since I was a little kid and wondered if it would be one of my kids’ favorites as well.  After perfecting my recipe for them, the vote was unanimous: Winner!!  It no doubt helped that strawberries are their favorite fruit. (We actually go through 2 lbs. of Driscoll strawberries every other day…thanks Sam’s Club!) 

Best of all, the shortcake can be made in no time and ahead of time if you’re preparing it for a family gathering or kids’ play date.  This will no doubt become a go-to treat this summer for my family and hopefully yours as well.

Strawberry Shortcake


  • 1 1/2 cups sugar
  • 2 cups all purpose flour
  • 1 1/2 cups buttermilk (you can use 2% milk as a substitute)
  • 1/2 cup shortening
  • 2 eggs
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. vanilla extract
  • 1 quart strawberries, sliced or quartered
  • 1 pint whipping cream
  • 1/4 cup powdered sugar


Preheat the oven to 350 degrees.

Grease and lightly flour a 9 x 13 inch baking dish and set aside.

In a large mixing bowl, combine first eight ingredients from the sugar to the vanilla extract. Mix thoroughly using a hand mixer.

Pour into the baking dish and bake for 30 minutes until golden. Set aside and allow to cool.

In a small mixing bowl, beat the whipping cream and powdered sugar until it reaches the desired whipped cream consistency.

Using a knife, cut the shortcake into 2 x 2 inch squares.

Layer the shortcake squares, strawberries, and whipped cream in glass parfait dishes or dessert bowls. Top with whipped cream and then strawberries. Enjoy!
